There’s nothing better than opening presents on Christmas morning with the smell of something sweet baking in the oven wafting through the house. For many, it’s cinnamon rolls that rise to the occasion. But this year, you might want to try The Pioneer Woman’s Mini Peppermint Rolls instead. Not only are they delicious, but they’re so easy to put together because Drummond uses one key store-bought ingredient.
“The great thing about this recipe is it’s incredibly simple because I did not make the dough from scratch,” Drummond said in a clip from her Food Network show shared on Instagram. “I am using none other than crescent roll dough that is sold in a tube in the grocery store. There’s nothing fancy about it.”
After unrolling her sheets of crescent dough on a flat surface, Drummond combines melted butter, sugar, vanilla extract, and peppermint extract in a mixing pitcher and then pours that mixture on one of the two sheets of dough, spreading it evenly across the surface. She then rolls the dough up, pinches the seam to keep all the contents inside, and cuts her rolls as evenly as possible.
After the rolls are baked and cooled, Drummond makes peppermint icing using confectioner’s sugar, milk, melted butter, a bit of red food coloring to give the icing that peppermint pink color, and a bit more peppermint extract. Ice each roll individually and sprinkle a bit of crushed candy cane on top to really sell the peppermint theme.
